Guest Post: Detoxing Rainbow Salad – Anna Cortesi

Happy Thursday & almost Friday! I hope you had a restful night and that you are getting lots done this morning. Here is the last of the guest post series (for now) from Registered Dietitian, Anna Cortesi with Anna Cortesi Nutrition. Detoxing rainbow salad

½ cup pomegranate
½ cup shredded zucchini
½ cup shredded carrots
½ cup shredded cucumber
½ cup shredded white and purple cabbage
3 tbs shredded celery
1 tbs zest of lemon
½ cup fresh lemon juice

Method:
Mix all shredded vegetables in a big bowl. Add the zest of the lemon and the fresh lemon juice and mix well.
