Pepita Energy Bites

These easy to make pumpkin energy bites are all you need for you road trip, camping adventure or day on the town! The kids even love them 🙂

We all have those days when we scrounge through the fridge only to find leftover carrots, ketchup, kale stems, kombucha, etc. Maybe not that extreme but you get the point, it seems like you have “no food!”. These energy bites are quick and easy to make and they make for the perfect snack, breakfast, pre-/post-workout fuel and the kids love them. They contain whole foods ingredients and I left room for you to make them you own. Add cinnamon, take away chocolate chips (savage), throw in green powder or whatever it is your heart desires.

There is no food that is easier to camp, travel or walk the town with. They fit easily into your purse, diaper bag and even your pocket. They hold up well in the elements and they are dang good! I love to drizzle some cashew or almond butter on mine because you know, nut butter is good. They are also perfect if you want to chop them up and add them to your oatmeal, cereal, nice cream or chia seed pudding!

Energy Balls

3 T. hemp seeds
½ cup flax meal
2.5 T. cacao powder
3 T. chia seeds
2 T. raw honey
1 cup dried oats
¼ cup chocolate chips
½ cup almond butter
*mix all ingredients
*roll into balls
*freeze for 30 minutes
