Grain-Free Almond Butter Energy Balls (dairy, gluten and refined sugar free)

I’m back from Mexico and created the most delicious almond butter energy bites. They are made with simple ingredients that were laying around our {boat} and they are super easy to make. You have to make these because simple and easy in one sentence is just too dreamy. They take less than 15 minutes to make and they store in the freezer which means they basically last forever, right?

These almond butter energy balls are the perfect vacation snack. Ashlee from Simplholistic made this with few ingredients and on a boat, so you can make them anywhere!

These balls are the real deal – protein, carbs, fat, trace minerals and gut friendly all in one. You can have them for dessert, breakfast, snack or really whenever you flippin’ want. I think you should dip them in some homemade chocolate every now and again too, it’d probably be a game changer. I rolled them in cacao nibs for a little extra crunch and gut healing properties. The cacao nibs are fermented and filled with trace minerals which makes for a happy belly.

This recipe boats a high nutrient profile: fiber is one of the superstars. When you eat enough fiber you have 1) good poops, 2) satisfaction after eating, 3) less cravings and 4) sometimes people even have a side effect of weight loss. This is because fiber is filing and when we are full, we stop eating!

What you’ll need

Almond butter

Coconut shreds

Coconut oil

Cacao nibs (optional)

Coconut sugar (optional)

Cinnamon & Sea salt

Vanilla

Coconut butter (optional)

Recipe: Almond Butter Energy Balls

¼ cup almond butter
¼ cup coconut shreds
1 t. REAL vanilla
2 T. melted or room temp coconut oil
1 t. cinnamon
sprinkle of sea salt

– mix all ingredients with a mixer (I used a fork cause… boat life)
– freeze for about 10 minutes to let the dough form (easier to roll)
– roll into balls and roll in cacao nibs if you’re heart desires
– store in the freezer or refrigerator
**add in optional ingredients if you’d like (coconut sugar – 1 T.) (coconut butter 1 T.)

      I would recommend storing them in the fridge! But you can store them in the freezer as well. We keep ours out in a little glass jar in our van pantry and they do just fine (as long as it doesn’t get too hot)
