PB & J is the theme of my childhood. Pull out the wonder bread (or whole wheat as I become “healthier” haha) and the suckers PB & J swirl. Slather it on a soft piece of bread with a particular ratio and mow down. Little did I know, I was celiac that whole time and feeding an autoimmune disease. How nice! If I was feeling fancy I would add some potato chips in or maybe even grill it, no messing around when it comes to lofty snacking babe.
There’s nothing that get’s me stoked like recreating childhood favorites that are JUST as delicious. Bread that’s nutritious, jam that’s homemade from berries I picked and cashew butter I ground up in my blender. It’s exiting and rewarding; I hope you love it as much as me! Cashew butter is the real MVP here. You’ll find it on the shelf at the grocery store but it usually contains oils like soy or canola, sugar and natural flavors. When you make your own, you have total control of what goes in. So, want to know my ingredients for this cashew butter?? Cashews + cacao butter, the latter is optional so all you need is 1 ingredient. I used Navita’s Organics cashews, my Vitamix blender and whipped it up in less than 5 minutes. Cashews are easier to digest if you soak and dehydrate them. So, pull out your dehydrator and get going!

Jelly. It’s not bad and won’t kill you. Just choose wisely. Remember, if you don’t want to make your own, look online or at your local grocery store. When you are shopping for jelly look for: organic fruit, lemon juice and fruit pectin. There is no need for cane sugar (hello, fruit is sweet), sodium benzoate, salt or any other ingredients. If you can’t find one without sugar, make sure it’s organic. Unfortunately, sugar is one of the top five GMO foods in the U.S..
