Spring Cleansing: Guest Post – Anna Cortesi

Guest blogger Anna Cortesi, RD, here today with this cleansing salad for spring! With all of these vitamins and healthy proteins you will be nice and fueled at the end of this meal. Enjoy 🙂

Dried fig and beetroot goat cheese salad (serves one)

  • 2 cups of spinach
  • 60 grams goat’s cheese
  • 6 dried figs
  • ½ orange cut in cubes
  • 1 beetroot, baked/grilled
  • 2 tbsp roasted pine nuts
  • 1 tbsp Honey
  • 2 tbsp balsamic vinegar

 

Method:

Mix all ingredients in a big bowl. Beat the honey with the balsamic vinegar to form the dressing. Toss the pine nuts on top of the salad and garnish with the honey/balsamic dressing.

Calories: 384  Carbs: 56g  Protein: 10.8g   Fat: 16.3g Fiber: 8g
