So, my grain free thumbprint cookies broke my website or something. They were up here on minute and down the next and you were quick to tell me about it over on Instagram! They’re back so I hope you jump on it quick and make them often.
I’ll keep it short and sweet for you. Here’s what you need:
** optional lemon essential oil
** optional organic jelly/jam
That’s it, three simple ingredients and an oven is all you need to make these delicious grain free thumbprint cookies. WARNING ** they are addicting but very filling so, you can’t eat that many at once.
This simple gluten-free recipe calls for only three ingredients and about 10 minutes of your time (total!!).
- 1.25 cup almond flour
- 1/4 cup coconut oil melted
- 2 TBSP pure maple syrup

mix all ingredients until a sticky dough forms

roll into small balls & place onto baking sheet

press down with your thump

add optional jelly

bake for 8-10 minutes at 375
Secret ingredient? Artisan Tropic cassava chips (roll the balls in the chips before you press), you won’t regret it!
I thought almond flour was a pro-metabolic no no because of the PUFAS?
(We have made these before and loved them)… would you recommend these not being a weekly treat due to the flour content?
Correct, this is an old recipe (so good but old). Almond flour is not recommended due to the rancidity of it!
