This delicious AIP “chocolate” bark is perfect for any occasion whether it be the holidays and all year round. When recipe creating, I always focus on pure ingredients that are adding to my health. This means you won’t find any:
- artificial dyes, flavors, sweeteners
- hydrogenated oils
- high fructose corn syrup
- GMOs
- other endocrine disrupting junk
Now, you will find nutrient dense whole foods though & they are delicious. I mean, who doesn’t love a recipe that energizes instead of causing an energy slump? Another delicious recipe is this Peppermint Paleo Bark one from Unbound Wellness.
The plantain chips from Artisan Tropics MAKE this recipe. Seriously, who doesn’t love a good ccrruunnccchhh with anything? The combo of the frozen “chocolate” + the crunchy plantain chips makes a dream team. Their products are Cassava chips, Plantain chips (sweet and salty), Chili Pepper and Cinnamon. Now, chips are my weakness and if I am going to have them I look for grain free versions like these ones! They make the perfect swap for corn chips.

What you’ll need
carob powder
coconut oil
dehydrated ginger
Artisan Tropics Plantain Chips
maca powder
blackstrap mollasses
lastly, a baking sheet & unbleached parchment paper

AIP “Chocolate” Bark – coming to a freezer near you
- 1 cup carob powder chocolate if you aren't AIP
- 1/4 cup + 4 tbsp coconut oil
- 2 tbsp blackstrap molasses
- 2 tbsp ginger
- 1 bag Artisan Tropics Plantain Chips
- 1 tbsp maca powder gelatinized (for better digestion)

Melt the coconut oil, carob powder and molasses in a pot

Pour onto a parchment paper lined baking sheet

Sprinkle with the ginger, maca and crushed plantain chips

Place in the freezer for 30 minutes or until frozen. Once it's out, break it up and store in a glass container.
