You only need 3 ingredients to make these grain free banana cream pies. What’s even better is that you don’t have to turn on your oven.. for me that’s good cause… FLORIDA. They are husband, dad, grandparent and kid approved + the vegan friends can even have them. It’s important to me that everyone is able to enjoy a meal together and that’s why I create these recipes. These mini pies are the perfect serving for one. So, you don’t have to worry about eating maybe 3 or 7 pieces of pie… oops!
When I said three ingredients.. I am not kidding. The only (partial) break in that statement is that you can add cinnamon.. but is that really an ingredient? Totally feeling my inner Lisa from The Well Necessities kicking in with 5 ingredients or less!
Grain free banana cream pies were something I used to dream about but not anymore. They came to life and you have to try them, like now! Two of the ingredients are probably hanging around your house and all you have to do is order or go to the store quick and buy the last ingredient! So, what do you think? Time to stop talking & “cook”?!
What you’ll need
canned coconut milk (full-fat & no junky ingredients)
ripe (but not too ripe) banana
Sejoyia Coco-Thins
cinnamon *optional
food processor/blender
mini mason jars

One of the best things about this recipe is that it’s free of ANY added sugar. The only sugar comes from the banana and the less ripe you get the banana, the less sugar it contains. Too much sugar can negatively affect our lady hormones so, let’s stay away from that. Sugars like cane sugar, evaporated cane juice, confectioners sugar and high fructose corn syrup are nutritional bandits. In other ways, they steal from our health. When I create recipes for you I only use nutritive sweeteners like honey, molasses, maple syrup, fruit, date syrup and coconut nectar. The occasional coconut sugar is in some of the recipes too. But you will never see refined sugar in any recipes on Simplholistic. Promise!
What good would I do you if I didn’t tell you WHY I made these?
Science, oh how I love you. Everything I do comes back to two things: Jesus & science. Luckily for me, the two are closely intertwined and I can fully understand the majesty of Jesus in his creation of this amazing planet and amazing FOOD.
Coconut is one of the starts of this recipe. I used full-fat coconut milk without any gums, stabilizers or other junky ingredients. When you are shopping for coconut milk, here’s what to look out for.
- POTASSIUM METABISULFITE – preservative & gut irritant
- CANE SUGAR – refined & from GMO sugar beets
- LOCUST BEAN GUM – gut irritant / inflammatory
- SODIUM BENZOATE – gut irritant / preservative
- BPA lined cans – linked to hormone imbalance and even cancer
Thrive Market and Trader Joes have the cleanest canned coconuts I have found to date.
Next up, bananas. Bananas are not the devil. Yes, they contain sugar. No, they aren’t “bad”. Bananas contain fruit sugar but also contain fiber. Fiber slows the spike that sugar can cause and it also gives us regular bowel moments which is critical for optimal health. Now, I’m not telling you to eat 4 bananas a day but I am telling you that 1 banana split into 3 mini grain free banana cream pies is just fine. Don’t fret.
Lastly, the thins. These delicious cashew cookie things are freaking dreamy. They have chocolate, salted, original and vanilla. Take your pick. Next time, I am making these pies with the chocolate ones… I’m drooling. Talk about a perfect crust for mini grain free banana cream pies. You take it out of the bag, place it in the mason jar & put on the toppings. Babe, this one’s fool proof! If you want something more traditional, this one from Against All Grains is amazing!
Okay, I’m ready to eat.
- 1 can full-fat coconut milk
- 1 ripe banana
- 1 bag Sejoyia Coco-Thins

Refrigerate the coconut milk for at least 24 hours (allowing the cream/liquid to separate)

Scoop out the cream & add to the blender/food processor

Add banana to the cream & process until smooth

Lay 1 thin on the bottom of the mason jar, layer with coconut filling, thin, filling, etc.

Top with sliced bananas & cinnamon
