This nose to tail healthy creamy broccoli soup is a trip down memory lane for sure. I keep it simple with the basic ingredients you can find around your kitchen and the crevices of your refrigerator drawers. You can’t mess this one up so if you’re not confident in the kitchen, this is for you! It has a little nose-to-tail spin for those added nutrients and an even deeper flavor. Here is the desiccated liver (code SIMPL) we use!
Jump to RecipeWhy the liver and beef?
I added the liver and beef to this nose to tail healthy creamy broccoli soup because it wouldn’t have been enough protein without the beef at the very least. The liver is a simple way to get in more organ meats in our diets and to add a hefty load of bioavailable retinol and heme iron into your diet. It’s a win and no, you can’t taste it.
In my private nutrition practice, 100% of the clients that come to me are under-eating and they don’t even know it! So, this is one of the ways I have them add more food to their plate, protein. It’s a metabolically supportive macro and it’s crucially important for balanced hormones, regular periods and clear skin. We all could use some extra protein in our lives.
Sourcing high quality ingredients for this Nose to Tail Healthy Creamy Broccoli Soup
You’ll notice all the grass-fed and organic labels in the recipe below. This is for many reasons but the largest being the fact that organic (truly organic, not what organic has become) ensures we are eliminating a host of pesticides, herbicides, Round Up and many other chemicals from or bodies. This is sooo important! It’s also sick to even think about what goes in on factory farms, it’s sick.
I shop – first – at my local farmers markets or directly from the farm. I ask them questions and vet their process before I give them my money and bring their product into my home to feed my family. If I didn’t plan or am running short on time (because I didn’t plan), I will purchase from a trusted local co-op or an online market I have vetted and trust. If you’re opting for the desiccated liver for your recipe, I recommend this one and you can use my code SIMPL for 10% off. Their products are:
- glyphosate residue free
- organic and gmo-free
- organic and grass-fed
- 3rd part tested for heavy metals
- ethically and sustainably sourced
Needless to say, I’m a fan.
The creamy broccoli soup
Alright, now let’s get to it. Get your comfy clothes on and let loose. Allow yourself creativity in the kitchen and don’t worry about the nuances, it’s a soup you’re putting in a blender 😉
- 4 tbsp organic grass-fed butter
- 1/2 large organic red onion whatever color is fine
- 2 lbs organic broccoli frozen or fresh
- 4 small organic carrots fresh
- 4 organic garlic cloves
- real salt
- black pepper freshly ground is amazing
- 4 cups organic grass-fed beef broth no added weirdness
- 1/2 cup organic grass-fed heavy cream raw works, too
- 1.5 lbs organic grass-fed ground beef
- 4 oz organic grass-fed beef liver or desiccated powder works
-
We used our instant pot since our other pot was in use for canning but you can also use a normal stock pot (no teflon, please)
-
Sauté the chopped broccoli in butter
-
Dice up the onion and carrot and add into the broccoli mix
-
Smash your garlic cloves with the side of the knife and throw those in whole
-
Add your salt and pepper and let sauté until the veggies are soft
-
Add your ground beef + chopped liver and season with salt and land let brown but not fully cook (if you're using the liver powder, just sprinkle that over the beef before you mix it in)
-
Pour in your broth and bring it to a boil, as soon as it reaches a boil, turn down the heat and let it simmer for about 10 minutes
-
Now you decide whether you're going to leave it all whole or you're going to blend it. If you leave it whole, pour in the cream, stir and dish up. OR
-
If you're blending, use your blender (whatever type you have and process the soup), return to the pot and add your cream. Give it a stir and serve.
