Eggs 5 Ways: My Favorite Paleo Egg Recipes (van life approved)

These paleo egg recipes are a life saver when it comes to life in a van or in a home. Eggs are so versatile and can make or break a recipe. Here are my five favorite egg recipes in a van and in a home. They’re all gluten-free, refined sugar-free and soy-free (as always).

Paleo Egg Recipes #1: Banana Bread

This one will be up on the blog soon since I did an Instagram Live and the crowd went nuts over it. All you need for this simple gluten-free banana bread is:

  • 3 overripe bananas
  • 1/4 cup + 2 tbsp coconut flour
  • 3/4 tsp baking soda
  • 3 eggs
  • vanilla
  • sea salt
  • optional ** chocolate chips or organic berries

Mash the bananas, add the remaining ingredients and pour into a parchment paper lined loaf pan or muffin tins. Bake on 350 for 50 minutes (for the loaf) and 25 minutes (for the muffins). I love the brand If You Care for their baking paper products since they are not bleached!

Egg Scramble

This one’s simple as it sounds. All you need is eggs, veggies, meat, greens and my favorite secret addition, coconut aminos.

  • 4 pasture raised eggs
  • 1/2 sweet potato
  • 1/4 red onion
  • 1 garlic clove
  • 2 cups local greens
  • 1 cup broccoli/cauliflower
  • 2 servings meat (bacon, sausage, ground beef)
  • coconut aminos & sea salt

Remember, you can use whatever veggies you have on hand. These are just the veggies we always have in the van! First, I chop all the veggies and get them ready to go. Chop them up thin and small so they sauté quickly.

Then, I pour about a tablespoon of avocado oil, lard, tallow or grass fed organic butter on the cast iron and let it coat the bottom of the pan. Once the oil is hot, add all the chopped veggies.

After the veggies are cooked, toss in your (COOKED) meat so it can warm up. Add in the eggs and stir stir stir. This is a giant egg scramble and you only have to wait for the eggs to cook at this point since everything else is already cooked!

Right before I take it off the heat, I add about 1-2 tablespoons coconut aminos for a sweet and salty taste. (Shout out to my friend Ash from @promisefamilyfarm for this trick)

Bacon, Egg & Greens Toast

It’s as simple as it sounds because doing van life means…. simplicity in all things. All you need is pasture raised eggs, organic local bacon from a farmer you trust, organic greens and a piece of paleo bread + butter! This is – hands down – one of the simplest paleo egg recipes.

Fry your egg, sauté your greens, fry you bacon and get your toast toasting. Once the bread is crispy, butter it up and put together your toast. If avocado is in season where you are, just do it, I knew someone would ask! Here’s why local is so important.

This is an oldie but a goodie. These Fudgy Carob Brownies are adapted from a recipe some you probably know on Instagram as @shutthekaleup created several years ago. You can whip this one up with the kids, it’s a fun one.
