Dried fig and beetroot goat cheese salad (serves one)
- 2 cups of spinach
- 60 grams goat’s cheese
- 6 dried figs
- ½ orange cut in cubes
- 1 beetroot, baked/grilled
- 2 tbsp roasted pine nuts
- 1 tbsp Honey
- 2 tbsp balsamic vinegar
Method:
Mix all ingredients in a big bowl. Beat the honey with the balsamic vinegar to form the dressing. Toss the pine nuts on top of the salad and garnish with the honey/balsamic dressing.
