Delicious Cherry Pie (grain free variation, too!)

You have to get your hands on this…. gluten free dairy free cherry pie! Coming in hot.

My father-in-law had a birthday recently and requested his all time favorite; a cherry pie. Recently, he made the switch to gluten/grain-free and thought he’d be out of luck. Not on my watch! I love to recreate delicious recipes that are good and good for you. So, this is a winning recipe and has the father-in-law stamp of approval.

The filling gelled up to perfection and the crust is a nice bronze and crispy. When it comes to pie, I like the crust more than the filling so, it better be dang good. I used One Degree Organic’s sprouted oats for the crust. Of course, I made a grain-free variation with almond flour instead of oats. All you have to do is swap the oat flour for almond flour. Best of both worlds.

Grain free dairy free cherry pie may sound like a flop but you’re about to be blown away. You won’t go into  food coma when you’re done, that’s the best part. There were 8 people in the house and everyone had a piece + a leftover. So, the pie feeds 9! Set your oven to 350 F and let’s get baking!

What you’ll need

GF organic oats (sprouted is best)

coconut flour

coconut oil or ghee

pastured eggs

maple syrup

organic cherries

coconut sugar

cassava flour

lemon juice

sea salt

Gluten free dairy free cherry pie, time to get the details

Cherries are one of the best sources of vitamin C. Vitamin C helps us to produce collagen and it’s an immune fighter as we all know. Remember, it’s best to buy them organic though since they are heavily sprayed. Oh and make sure you get the pits out! The reason behind the cassava flour is that I didn’t want to use cornstarch to thicken up the filling. Cassava is a tuber and is approved on the AIP. Cassava flour makes for a perfect swap to cornstarch like nobody’s business and isn’t a gut irritant like GMO corn. Plus, you can use it in other baked goods so, it’s a win win!

Why the GF and organic oats? Great question. Oats are 9/10 times contaminated with gluten since they are rolled in flour. Plus, most facilities process their oats on the same belts as gluten. To be safe, go for the certified gluten free or find a brand you trust 100% of the time. The reason you need to look for organic is because of glyphosate… It’s the terrible nasty chemical from Monsanto that’s found in Round-Up. It’s a chemical you don’t want anywhere near you, let alone in your mouth. Additionally, studies show high levels of glyphosate in kids Cheerios… ugh! One Degree Organics oats are my favorite and you can get steel cut, quick oats or rolled oats. The go perfectly with this gluten free dairy free cherry pie.

^^ those are the ingredients from a store bought cherry pie… and it costs $60?? Instead, I vote you treat yourself with something nutritious and less expensive.. I mean, come on! You have to try this gluten free dairy free cherry pie,

Gluten Free Dairy Free Cherry Pie
Ingredients
Crust
  • 1/2 cup coconut flour
  • 1/2 cup organic oat flour homemade
  • 1/4 cup coconut oil or ghee chilled
  • 2 pastured eggs
  • 2 tbsp maple syrup optional
  • 1 tsp cinnamon optional
Filling
  • 2 bags organic cherries juice in
  • 1/4 cup coconut sugar
  • 1.5 tbsp cassava flour
  • 1.5 tsp lemon juice
  • pinch sea salt
Instructions
  1. mix all crust ingredients & press into a pie pan

  2. mix all filling ingredients and pour into the crust

  3. bake for 30 minutes on 350 degrees F

Notes

highly recommend you serve it with some dairy free ice cream or homemade coconut whip!
